Located in Glasgow’s West End, Eighty Eight is a small plates menu that champions creating dishes from top quality, locally sourced produce. With a menu that changes daily, depending on what’s seasonally available, you’re guaranteed to have delicious and exciting dishes with ingredients at their freshest

What makes it a ‘Food Hero’ dish? 

This dish draws attention to wasteful practices found in some kitchens and menus across the industry and works around themButtery fondant potatoes usually come portioned into neat round towers, but what happens to the rest of the potato? Unfortunately, anything surplus to the shape of the mould is typically wasted. Not at Eighty Eight. This dish sees the rest of the potato” have its rightful place on the plate, filling the cut-out potato centre with tender braised beef offcuts. In some restaurants these offcuts would end up thrown into a stockpot to add flavour, before ultimately being strained and discardedOn this dish, they’re used. Pickled diced veg showcases a preservation technique, but also represents the meticulous precision some chefs in the industry work to, and where produce isn’t prepared to exacting standards, is binned and re-chopped without question.

Please bear in mind that as a food waste campaign that focuses on using surplus ingredients, dining options may change regularly. We think this is something that should be celebrated – although it does make it difficult to know in advance which options you’ll be able to choose  from, or their availability. So when it’s gone, it’s gone. And when it’s gone, there’s no waste!

Participating venues are responsible for showcasing their own daily dining offers throughout the campaign period. We would strongly recommend contacting them directly to confirm details and availability before your visit to avoid disappointment.

Due to the nature of this campaign, catering for all dietary requirements may be limited. However, we have done our best to cater for as many needs as we can.

And of course, dining options are never created with ingredients that are past their sell-by date. “Leftover” food is just food that is surplus or unsold, which unfortunately happens all too often along food supply chains.
