What it's all about:
Grain and Grind opened their first coffee shop in the Battlefield area of the Southside of Glasgow in 2018 and have since gone from strength to strength, with four other Southside venues. They offer bright, laid-back spaces where folks can enjoy well-crafted coffee (roasted themselves in Inverness), mahoosive brownies, daily freshly baked bread, and creative seasonal dishes. From flat whites and empire biscuits to a banging brunch, they’ve got you covered.

(Poached chicken thigh with crispy skin in an aromatic chicken broth topped with house-made kimchi, pickled vegetables, and sriracha).
What makes it a ‘Food Hero’ dish?
This dish minimises food waste by ensuring all bones and offcuts go into the stockpot to add a depth of flavour to the chicken broth, while the skin is crisped up to add an ultimate ‘chicken crackling’. But it doesn’t stop there. This dish uses an innovative process of using eggshells to clarify the stock – showcasing how chicken and egg ‘scraps’ can be repurposed. Grain and Grind also work with their local suppliers rescuing any surplus, ugly, or bruised veggies, and transform them into homemade kimchi, pickles, and sriracha sauce – all of which top off this hearty ramen dish.

Please bear in mind that as a food waste campaign that focuses on using surplus ingredients, dining options may change regularly. We think this is something that should be celebrated – although it does make it difficult to know in advance which options you’ll be able to choose from, or their availability. So when it’s gone, it’s gone. And when it’s gone, there’s no waste!
Participating venues are responsible for showcasing their own daily dining offers throughout the campaign period. We would strongly recommend contacting them directly to confirm details and availability before your visit to avoid disappointment.
Due to the nature of this campaign, catering for all dietary requirements may be limited. However, we have done our best to cater for as many needs as we can.
And of course, dining options are never created with ingredients that are past their sell-by date. “Leftover” food is just food that is surplus or unsold, which unfortunately happens all too often along food supply chains.
